Peach Pickles




When I was a kid I loved peach pickles. I don't remember my Mom making these although she may have. What I do remember is that my Aunt Dot made them. When she made them they would be whole peaches. I loved to get a whole one out of the jar and put the whole thing in my mouth. I would suck on it and it was so juicy it would slide right off the pit. I'd get rid of the pit and slurp the pickle down.

I tried to recreate some peach pickles today and I think I did okay. I sliced the peaches and made the pickling brine using a recipe from a Southern Living cookbook.

Peach Pickles
2 lbs peaches (about 5)
1 1/8 cups sugar
1 cup apple cider vinegar
1 cinnamon stick
2 T whole cloves ( I only used about a T because that's all I had).

1) Bring the sugar and vinegar to a boil and cook for 5 minutes.
2) Add spices
3) Add peeled and sliced peaches
4) Bring back to a boil and cook for 3 minutes.
5) Let cool at room temperature for 24 hrs.
6) Eat and enjoy - refrigerate if there are any left.
