Roasted Butternut Squash and Apple Soup


Yesterday I made the Dr. Weil's Stress Free Squash Soup from the NY Times. I modified it slightly; I simmered everything after roasting for about 20 minutes and then pureed. It was delicious. (I did not use the cilantro-walnut pesto...just the soup.)
