Hobo Fish


On Sunday I made a recipe I called Hobo Fish. It is in the latest Cuisine at Home magazine. Its simply fish that's cooked atop veggies in foil on a grill. I chopped and mixed together an orange pepper, 4 small tomatoes, several cloves of garlic, about a cup of canned artichoke hearts, and an onion. I added 1T paprika and salt and about 1/2 cup of white wine. I placed a couple of large spoonfuls of this on a sheet of heavy duty foil. On top of the veggies I put about a half pound of cod and then on top of the cod I put a couple of lemon slices. Last I folded the packets up very good. I cooked it for 10 minutes on the grill and then we ate. Be careful opening the packets because the steam that escapes is very hot!
