Zuppa Arcidossana
I made Zuppa Arcidossana tonight for dinner. Lin had sent me a link to a video recipe from Mark Bittman at the NY Times for this soup (it had actually come from Lambie to Lin first). Its a simple Tuscan soup with Italian sausage, onions, carrots, garlic, bread and garlic. What makes the dish though is the ricotta salata cheese that is put on the soup at the end. It was a delicious hearty but not heavy soup - really a stew. And it was extremely easy to make. I'll make it again! Here's the link to the recipe.
