Quesadillas

I have discovered quesadillas...no; it's not like I've never had one before. But I've had them for dinner the last two nights and it was so good and easy and simple. Tonight I had a quesadilla with plum tomatos, happy peppers, some cooked onions and mushrooms I found in the fridge, bacon and cheddar cheese. I had a large quesadilla that I put in a frying pan then added the ingredients on one side; folded it and cooked until it was golden brown. Then I flipped it and cooked the other side. I took it out of the pan, cut it up and ate it with some salsa. I added a Curve Ball beer and chowed down. Yum....
