Many years ago Lin and I found a box in a grocery store of Lentil Pilaf. It was a box that contained lentils, rice and some spices. We bought some and enjoyed it. It was quick, easy and cheap. We've been eating something like it ever since off and on. Today I was reading a food blog I like - Orangette - and she mentioned a dish and a recipe for mujadara. Since it was a lentil dish I clicked on the link and looked at the recipe. And lo and behold it was essentially that lentil pilaf.
So since today is vegetarian Tuesday and I have dinner by myself I thought I would make it. And man was it delicious. The key is the caramelized onions that take some time to prepare - but wow do they really add to the dish. It was creamier and oh so much better than what we'd had in the past. No more box!
And it's so good to know a real name for the dish. I'm already looking forward to having this for lunch tomorrow!
