Today was a day to make salsa verde. I had bought some tomatillos a few days ago and have been wanting to make this. KT wanted chicken enchiladas for dinner so this seemed like the perfect time. I really like the roasted taste of the tomatillos and chilis. It was super easy to make. Here's a link to the recipe.
